Thursday's Tasty Temptations

Christmas Eve has always been a wonderful time of year for my family and being Christmas, you know there will be good food.

One of my best Christmas memories is waking up to the heavenly aroma of baking ham. Mama would bring out the old roasting pan before we went to bed and place our prize inside. The oven would be set for about 200 degrees and the ham would slow cook all night. Breakfast on Christmas morning after the presents were opened was a ham sandwich and a glass of milk. We didn't need any accompanying breakfast foods. A fond memory of a tradition I continue in my home to this day.

I could fill dozens of blog posts with Christmas foods I love but one other comes to mind and I'll share the recipe!

Grandmama Lavender's Ice Box Fruitcake

1 box Vanilla Wafers put through the food processor

1 cup raisins

1 cup pecans

1 cup flaked coconut

1 large container of red candied cherries or 1 small container each of red and green cherries for a festive Christmas look

1 can sweetened condensed milk

Mix all ingredients and press into a buttered pan - tube, loaf, or 9x13. Place in the fridge over night until it sets. It slices just like a baked cake but you will need to keep it stored in the fridge.
